VEGETABLE FRIED RICE


We have heard and must have prepared fried rice several times before now, but there are different ways of preparing fried rice. Today I bring you another type of fried rice and a healthy one at that because it has to do with vegetables. So give your self a different taste today. Have a nice Sunday!
Ingredients
  • 1.5 cup of rice 
  • 1 medium size carrot, finely chopped or shredded
  • 1 small capsicum, finely chopped
  • ½ cup finely chopped or shredded cabbage
  • ½ tsp finely chopped ginger
  • ½ tbsp chopped celery
  • 8-10 french beans, thinly sliced or finely chopped
  • Lettus, sliced or finely chopped
  • seasonings
  • sweet corn
  • spring onions
  • 4 to 5 cups water for cooking the rice
  • salt and black pepper as required
Preparation


  1. soak rice in water for 30 mins.
  2. drain and cook the rice in 4 to 5 cups water, till the grains are al dente or just cooked.
  3. strain in a colander and let the rice cool completely.
  4. cover and keep the rice aside.
  5. when the rice is cooling, chop the veggies and keep aside.
  6. heat oil in a wok or a pan.
  7. first add the seasonings and fry for half a minute or till the oil becomes fragrant.
  8. add all the veggies(cabbage, lettus, carrot, spring onions, sweet corn e.t.c) and stir fry on a high flame.
  9. if you cannot handle stir frying on a high flame, then stir fry on a medium flame.
  10. you have to continously stir while frying so that the veggies are uniformly cooked and do not get burnt.
  11. the veggies have to be cooked till they are almost cooked and yet retain their crunchiness and crispiness.
  12. add the soy sauce, salt and pepper.
  13. stir quickly and add the rice.
  14. stir fry for a few minutes till the sauce has coated the fried rice well.
  15. serve the veg fried rice hot plain.
Notes
to give a sweet taste to the veg fried rice, you can add a bit of tomato sauce.
to give a hot taste and flavor, you can add some red chili sauce.
